Consider the allium. It’s time for them to step out from their supporting role and into the limelight. Onions, garlic, leeks, chives and shallots, alliums are reliable and hardy in flavor, and readily on hand in any pantry. In other words, they are always there for you. The perennial, largely bulbous plant is available in more than 900 species during all four seasons of the year. Here on the Vineyard, spring onions and garlic are one of the first signs of warmer months ahead, and leeks mark the fall harvest of alliums. But they are beyond harbingers of a season, they are building blocks of any good savory dish.
