The Unruly Brassica Oleracea

Kale, a member of the Brassica oleracea family, is a true joy of the winter garden. Dark greens, purple and durable, this leafy, crisp vegetable is a powerhouse of nutrients. What makes kale different from other brassica vegetables (like cauliflower, cabbage and Brussels sprouts) is the appearance it has when growing. Instead of bundling together and forming a head, kale spreads out and unbundles, exposing big unruly leafy and curly green patches. Eat it raw or cook it up, either way you’ll find it’s not hard to taste a lot of flavor from even the smallest amount.
