When Chef Sarah Hibler prepares a summertime menu on the Vineyard, simplicity rules.
“I got to thinking about summer, being able to go to the beach or go out on a boat and then coming home and putting together a dinner that’s relatively stress-free,” says the chef.
Vineyard summers include short swims in the ocean to cool off and setting sail somewhere on the Island you’ve always wanted to explore, especially when friends come to visit.
And after Island adventures, who isn’t hungry?
Harvesting from sea, forest and field, Sarah transforms freshly caught fish into a dinner party star. She gives color to simple salads with edible flowers, all the while maintaining that each of her dishes is healthy and delicious.
And she believes each meal should celebrate the season. Start with these recipes and adapt them as you see fit, because Sarah, as her menu reflects, knows that simple meals and special moments are two things that seem to make summer last forever.
