Not to be confused with latkes

I expect a lot from a pancake. Sweet, fluffy and crispy around the edges. I’ve done my best here to combine these characteristics in creating one of my favorite morning meals. The most challenging part of this recipe creation was figuring out which kind of sweet potato to use.
I tested the recipe with two kinds. White, known as Boniato, and the traditional orange, also called Jewel.
The white sweet potato pancake was delicious, pleasantly textured and not overly sweet.
The orange sweet potato pancake yielded a pumpkin flavor, yet still maintained the subtly gritty texture.
In any case, these are some serious flapjacks. Stack up three or four of these with homemade Cinnamon Brown Butter Syrup and the day is yours.
