Thought to have been grown as far back as ancient Egypt, it wasn’t until about the 10th century that records exist of carrots’ cultivation, mostly within Afghanistan and Kazakhstan. Initially, the most common colors were purple and yellow (even red and black!), not the vibrant orange that we’ve come to expect today. But if there’s one thing that has remained the same, it’s the root’s versatility across courses, continents, and cuisines.
