Turmeric Carrots

Ingredients

  • 3 pounds whole carrots, scrubbed and unpeeled
  • 2 Tbsp. extra virgin olive oil
  • 2 tsp. ground turmeric
  • 1 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 garlic cloves, minced
  • 2 limes, zest and juice
  • 1/4 cup parsley, picked
  • 2 Tbsp. chopped mint

Preheat oven to 400°. Toss carrots with olive oil, spices, salt and pepper and minced garlic. Bake in 400° heated oven for 40-45 minutes, or until the carrots are nicely caramelized and fork-tender.

Remove from the oven, finish with lime zest, lime juice, parsley and mint.

Yield: 6 servings
