Spicy Cold Mango Soup

Ingredients

  • 2 large ripe mangoes
  • 1/2 cup cold water
  • 1/4 cup coconut milk
  • 1 lime, juiced
  • 1/8 cup chopped onion
  • 1 teaspoon chopped chili pepper (or to taste)

Blend all ingredients together into a fine pureĢe, adding extra water in small batches if necessary.

Chill before serving.


Yield: 4-6 servings
