Raw Corn and Tomatillo Salsa

Ingredients

  • 3 cups fresh corn kernels (4 ears)
  • 5 tomatillos, husked and finely diced
  • 3 jalapeños, seeded and finely diced
  • 1 1/4 cup apple cider vinegar
  • 1 large red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1/4 cup honey or agave nectar
  • 1 teaspoon celery seeds
  • 1/2 cup cilantro, chopped

Combine ingredients and let sit in the refrigerator for at least 1 hour.

Yield: 4-6 servings
