Pork Meatballs

  • 1 lb. ground local pork, beef, turkey, or a combination.
  • 1 cup gluten-free cornflake crumbs or Rice Chex crumbs (crushed in Cuisinart or by hand with a rolling pin)
  • 2 Tbsp. ketchup
  • 1 egg (preferably local)
  • 1 tsp. dried basil
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • pinch of salt

Mash all ingredients together in a bowl. Form into small flat patties and fry in olive oil until browned on both sides. Serve with marinara sauce and a salad.
