Luscious Creamed Corn
- 8-10 ears of corn
- 1 cup minced shallots
- 1 1/4 tablespoons butter
- 2 cups fresh cream at room temperature
- Salt, black pepper, fresh nutmeg to taste
First, remove the corn kernels from the cob. Place a large sauté pan over medium heat. Add the butter and the shallots to the pan and cook for about 1 minute.
Add the grated corn kernels and cook for an additional 2 minutes, stirring. Add the cream, salt, pepper, and nutmeg to taste and reduce the heat to low. Continue cooking and stirring until the mixture thickens, 2-5 minutes.
Yield: 4-6 servings
