Jalapeño Watermelon Agua Fresca
- 4-5 cups cubed watermelon (plus more for garnish)
- juice from 3 limes
- 1 jalapeño, chopped (seeds and stem removed)
- 1 Tbsp. local honey
- 1/4 tsp. sea salt
- 1-1/2 cups sparkling water
- 1/4 cup fresh mint
- 1 cup tequila (optional)
In a food processor, blend watermelon and jalapeño until smooth. Strain the mixture and pour into a pitcher. Add salt, lime juice, mint, honey (and tequila). Stir to combine. Add sparkling water and stir twice more.
Pour over ice and garnish with jalapeño, mint, or watermelon slice.
Yield: 1 pitcher
