Irish Soda Bread

  • 4 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 Tbsp. butter or pam
  • 1-1/2 cups buttermilk

Mix flour, baking soda, salt. Slowly add buttermilk, stirring with fork until loose dough ball forms. Place dough on lightly floured surface. Form into one large circular loaf or four small loaves approximately 1.5 inch thick. Slice 1/2 inch-deep X into top of loaves (with serrated knife?). Grease cookie sheet with butter or Pam. Bake at 425°F for 20 to 40 minutes until lightly browned with a crunchy top— my mom’s favorite part.

Yield: 1 loaf
