Switchel Recipe
Ingredients
- 1 cup apple cider vinegar
- 1 cup molasses
- 1 Tbsp freshly grated ginger root
- 1 quart water

Stir all ingredients together and serve over ice. If you have time, prepare it four to eight hours in advance, as it helps to mellow the ginger.
Recipe yields 4 large mason-jar size servings
