Hara’s Homemade Mashed Sweet Potatoes

Fill a large Pot with water salted until it tastes like the ocean. Wash and peel the sweet potatoes (or leave them unpeeled for a more rustic taste), cut them into 1-inch chunks, and add them to water. Bring to a boil, then reduce to simmer for 15 to 20 minutes. Drain most of the water out but save some to add later.
Put drained potatoes back into the pot, add some butter or olive oil, and mash them with a potato masher or large spoon. Add milk and/or some of the cooking liquid and continue mashing until the potatoes are as soft or as thick as you want them. Add salt and pepper to taste.
