Grilled Spring Onions

Enjoy these with anything. Serve as a side dish, as a simple meal with cheese or an egg, or cold on a sandwich. Also try topping them with chopped fresh herbs such as thyme or chervil


  • 3 bunches of spring onions (baby leeks, scallions, or baby onions) washed, dried well, and tips trimmed
  • Olive oil or sunflower oil to coat
  • Salt to taste
  • Fresh black pepper

Toss your onions with oil and salt and grill over a strong fire until slightly charred and limp. Alternatively, you can blister these in a hot pan then cover and let cook slightly over medium low, careful not to burn. Add a squeeze of lemon juice and a turn or two of fresh black pepper.
