Grilled Spring Onions

- 3 bunches of spring onions (baby leeks, scallions, or baby onions) washed, dried well, and tips trimmed
- Olive oil or sunflower oil to coat
- Salt to taste
- Fresh black pepper
Toss your onions with oil and salt and grill over a strong fire until slightly charred and limp. Alternatively, you can blister these in a hot pan then cover and let cook slightly over medium low, careful not to burn. Add a squeeze of lemon juice and a turn or two of fresh black pepper.
