Dark Chocolate Pudding

  • 1 cup sugar
  • 3 Tbsp. cornstarch
  • 1 pinch salt
  • 2 tsp. vanilla extract
  • 5 egg yolks
  • 2 1/2 cups dairy milk, soy milk, or hemp milk
  • 4 oz. unsweetened chocolate, melted
  • 2 Tbsp. butter or margarine, cut into bits

Combine all ingredients except the butter/margarine and chocolate in a medium heavy-bottomed saucepan. Follow cooking instructions for Basic Vanilla Pudding, adding the melted chocolate and the butter as soon as you remove the pot from the heat. Whisk vigorously to combine. The mixture will look curdled and broken at first when the chocolate is added, but have faith and continue to whisk. Another minute and a half and it will be smooth and glossy. Pour it immediately out of the pot and directly into the bowl or ramekins.

Recipe yields 6 servings.
