Cucumber Melon Ice Pops

Ingredients

  • ice pop molds
  • 1 large cucumber, seeds removed
  • 1/2 seedless watermelon
  • 1-2 limes
  • 2-3 mint leaves (optional)
  • 3 Tbsp. honey
  • 3 Tbsp. water

Juice the cucumber and watermelon into separate bowls, either with a juicer or a blender. Pour through a fine mesh sieve afterwards. This is your juice. Set aside.

In a saucepan, add honey, water, lime juice, and mint leaves. Heat until honey has dissolved. Remove mint leaves from the pan. This is your simple syrup, set aside. To construct popsicles add half of simple syrup mixture to each batch of juice.

Pour your first layer into the ice pop molds. Freeze for 2 hours. Add your next layer of juice to the mold along with the ice pop stick. Freeze for 2 hours. Continue to add layers of juice until your molds are full.

Yield: 6 ice pops
