Coconut Milk

Health Benefits: Coconut milk contains fatty acids that support immune function, reduce heart disease risk and improve skin and hair health.

Ingredients

  • 1 cup dried unsweetened coconut
  • 4 cups water
  • sea salt
  • liquid sweetener (honey, agave, maple syrup), optional

Using a blender, puree the coconut and water until smooth, about 2 minutes. Pass the mixture through 3 to 4 layers of cheesecloth or through a nut milk bag. Season coconut milk with a pinch of sea salt and liquid sweetener to taste.

Yield: 4 1⁄2 cups
