Chocolate Covered Marshmallows

To cover 24 marshmallows in chocolate: In a double boiler, heat 8 ounces bittersweet chocolate with 2 tablespoons butter or margarine. Stir until melted and smooth. Remove from heat. Gently dip the marshmallows into the warm chocolate using two spoons.
Set the dipped marshmallows on a clean parchment-paper lined cookie sheet.
Chill 20 - 30 minutes in the refrigerator, or until the chocolate is hardened.
Note: This recipe will allow you to cover half your batch of marshmallows in chocolate. I like to toss the other half in powdered sugar so I have something for my morning coffee or hot chocolate. If, however, you want the entire batch of marshmallows dipped in chocolate, melt 16 ounces chocolate with 4 tablespoons butter or margarine.
Yield: 4 dozen large marshmallows
