Chicken with Okra

  • 1 package of chicken drumettes
  • 1 package of frozen okra
  • 4 cloves of garlic
  • 1 Tbsp. salt
  • 1 can of tomato paste
  • 1 chicken boullian cube
  • water to texture
  • oil
  • lime or vinagre and parsley

In one pan, fry seasoned chicken in oil. In another pan fry okra in a small amount of oil. After 5-7 minutes squeeze lemon or add vinagre to okra to remove the sap.

Once chicken is almost done, in a separate large pan, take some of the oil from the chicken or okra (1/4 cup approximately) and add chicken boullian cube.

Mash the garlic and mix in salt. Add mixture into oil and brown. Add 3 Tbsp. tomato paste. Mix together.

Add in chicken and okra. Stir.

Add approx. 1 1/2 cups of water. Until it is a thick, soupy consistency. Simmer for a half hour. Stir in chopped fresh parsley.

Enjoy over rice.
