Cashew Milk

  • 1 cup raw cashews
  • 2 cups water
  • sea salt
  • liquid sweetener (honey, agave, maple syrup), optional

Place the cashews in a bowl and cover with water. Let the nuts soak overnight and then drain, discarding the soaking water. Using a blender, puree the soaked cashews with 2 cups of fresh water until smooth, about 2 minutes. Do not strain. Season cashew milk with a pinch of sea salt and liquid sweetener to taste.

Yield: 4 cups
