Cardamom Brown Rice

  • 1 cup long brown rice
  • 1 3⁄4 cups water, salted and boiling
  • 6 pods of cardamom
  • 1 bay leaf
  • 1 cinnamon stick

Wash rice, and dry toast it over medium heat. Then add it to the boiling salted water. Return it to a boil and add the cardamom, bay leaf and cinnamon stick. Let the covered pot simmer for 45 minutes on low heat. Turn off the heat and let it steam for 15 more minutes, keeping the pot covered. Remove spices, serve immediately.
