- 2 medium-sized grapefruits
- 1 cup sugar
- 1 cup water (plus more to cover)
Cut peel from grapefruits into 3/8-inch strips leaving 1/4-inch white pith attached. Place in a small sauce- pan; add cold water to cover. Bring to a boil, then drain; repeat three times.
Add 1 cup water and sugar to the saucepan with the rind. Simmer until the peels are translucent, about 15-20 minutes. Put the peels on a baking sheet lined with parchment paper and let cool for about two hours.
Yield: 4-6 servings
