- 1 cup brown sugar
- 6 Tbsp. butter or non-dairy margarine, cut into bits
- 1 pinch salt
- 1/4 cup cornstarch
- 4 egg yolks
- 2 tsp. vanilla extract
- 3 cups dairy milk, soy milk or hemp milk
In a mixing bowl, combine salt, cornstarch, egg yolks, vanilla, and milk. Whisk until smooth and set aside.
Melt 4 Tablespoons of butter on low heat in a medium heavy-bottomed saucepan. Add the brown sugar and whisk until smooth and melted. Remove from heat. This is your butterscotch.
Pour contents of mixing bowl into the butterscotch pot, and whisk till incorporated. Return pot to medium heat, and cook pudding just as in the Basic Vanilla Pudding recipe. Chill and serve.
Recipe yields 6 servings.
