Bluefish with Gin

  • 1 bluefish fillet, 3 lbs.
  • 1/4 cup melted butter
  • 3 Tbsp. onion flakes
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 3 oz. gin

Preheat broiler to 500° F. Put fillet in broiler pan or on a sheet of heavy aluminum foil. Pour half of the butter over the fish. Sprinkle with onion flakes, salt and pepper. Broil fish 3 in. from the source of the heat. When the fish starts to brown, mix gin and remaining melted butter and pour over fish.. Ignite gin with a match and quickly return to the broiler. Broil fish for 3-5 minutes, and turn off heat. Fish will sputter and flame; when the flame dies, the fish is ready.
