Blueberry, Coconut, & Chocolate

Ingredients

  • 1⁄2 avocado
  • 1 handful spinach or kale
  • 1 cup frozen blueberries
  • 1⁄2 cup coconut milk (I use unsweetened So Delicious)
  • 1⁄2 cup coconut water (I like Harmless Harvest the best, but it is very expensive, so also use Pure brand organic coconut water)
  • 1 tablespoon cacao
  • 1 tablespoon protein powder (I use an unsweetened whey product)
  • 3 sprigs mint

Blend all ingredients until emulsified.

We like thick smoothies, but you can always add more coconut water for desired thickness.

Yield: 2 servings
