Heat oven to 350°F. Slice beets thin using a mandolin or any other hand slicer. In a small bowl whisk olive oil with a pinch of cayenne. Spread beets slices on a baking sheet over parchment paper and brush with the olive oil-cayenne mixture. Sprinkle with salt.
Bake for about 15 minutes on each side until crisp.
