Banana Muffins (Gluten-Free)

Ingredients

  • 2 cups Rice Flour or Sorghum Flour Baking Blend
  • 1⁄2 tsp. salt
  • 3 tsp. baking powder
  • 1⁄2 tsp. baking soda
  • 2 eggs (preferably local)
  • 1⁄2 cup vegetable oil
  • 2 tsp. vanilla
  • 1⁄2 cup brown sugar
  • 1⁄2 cup non-dairy milk (hemp, almond,soy,rice)
  • splash rice vinegar
  • 2 mashed bananas

Mix all ingredients together. Spoon into oiled or paper-lined muffin tins. Bake at 350° for 12–15 min or until tester comes out clean.
